Celery has a long and prestigious history of use, first as a medicine and then later as a food. The Chinese used it for medicinal remedies; the ancient Greeks used the leaves as laurels to decorate their renowned athletes, while the ancient Romans used its distinctive flavor as a seasoning.
If you have ever tried rehydrating dried celery you've probably noticed that no matter how you try, that little shriveled up vegetable is never going to grow back to resemble it's fresh state no matter what you try. So how can you capture and release this unique flavor to it's full potential? Turn it into celery powder!
Wash and slice the celery into 1/2 inch slices. Steam it until it just begins to turn tender, drain the water and spread the celery out in a single layer on your solid drying sheet. It sometimes helps to wipe the sheet down ahead of time with a thin swipe of olive oil to prevent sticking. Dry at 130 degrees Farenheit for about 12 hours or until the celery is crunchy. Cool to room temperature and grind to a powder in the blender. Twelve pounds of celery, before it is dehydrated, grinds down to about 2 cups of dried powder. Add a generous portion to every meal you prepare, it can be that little flavor it's been missing!
