What is Feta Cheese?
Feta cheese is a rich and creamy soft cheese of Greece, the authentic version is made of whole sheep's milk. It's been incorporated as a main ingredient of Greek meals for centuries. It is so popular in Greece that very little gets exported. In fact, most of the imported feta cheese comes from Italy and most may be made from cow's milk, skimmed milk, or partially-skimmed milk.
Feta is simple to dry and brings out a sort of tang to the sauce of a rehydrated meal enhancing not only Greek creations but those meals with Italian flair as well.
Feta for dehydrating can be purchased fresh already crumbled or in a brick. Regardless what form the cheese is purchased, you must make sure that the cheese is broken down into 1/4 to 3/8 inch chunks, all uniform size as much as possible. Dry at 145 degrees F in a food dehydrator (with temperature control and fan) for about 6 hours or so, until it feels light and breaks easily when squeezed.

Rice with Spinach and Feta Cheese Recipe
¼ cup dried onion
2 large garlic cloves, minced and dried
1-1/4 cups cooked brown rice dehydrated
Instant chicken broth (to make 2 cups)
1 ounce dried spinach leaves
¼ c. dried tomatoes, chopped
½ c. dried feta cheese
Salt and fresh-ground black pepper, to taste
Instructions
In a saucepan, add the onions, garlic, rice, dried tomatoes and chicken broth. Stir to mix well and bring to a boil. Reduce the heat to low, cover and cook about 15 minutes or until the rice is almost tender. Stir in the dried spinach and feta cheese, season with salt and pepper, cover and cook another 8 minutes, or until all the liquid has been absorbed. Serve immediately.
